Gluten Free Paleo Pumpkin Protein Muffins

This naturally sweetened baked good is perfect for a quick healthy breakfast or snack. It’s easy, gluten-free, paleo, whole30 AND low-carb!

Servings: 24 mini muffins Total Time: 25 minutes

 

INGREDIENTS:

  • 1/2 cup pumpkin puree
  • 1/2 cup almond butter smooth and creamy
  • 1/4 cup almond flour
  • 1 medium banana
  • 1 large egg
  • 1 packet LonoLife Vanilla Collagen Peptides
  • 2 tablespoons maple syrup
  • 2 tablespoons coconut flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt

DIRECTIONS:

1) Preheat oven to 375℉. Generously grease a 24 mini muffin pan with coconut oil or avocado oil.

2) In a food processor (or high powered blender) blend all ingredients for the muffins until the batter is completely smooth.

3) Using a small ice-cream scoop, fill a mini muffin pan ¾ full with batter.

4) Bake for 20 minutes until golden.
