Herby Chickpea Salad

Adding LonoLife Unflavored Collagen Peptides to our chickpea salad gives any sandwich a nutritious boost!


INGREDIENTS:

  • 1 batch Vegan Chickpea Salad (recipe below)
  • 2 whole-grain bagels
  • 2 tablespoon Dijon or yellow mustard
  • 2-4 large butter lettuce leaves
  • 1 cucumber, thinly sliced
  • 1 carrot, thinly sliced using a vegetable peeler
  • 4 radishes, thinly sliced
  • 1 large handful alfalfa sprouts

Vegan Chickpea Salad

  • 1 can chickpeas, rinsed and drained
  • 1 packet LonoLife Unflavored Collagen packet
  • 1/4 cup chopped Italian parsley
  • 1/4 cup chopped dill
  • 2 tablespoons whole grain or Dijon mustard
  • 2 tablespoons mayo
  • Salt and pepper, to taste

DIRECTIONS:

Make your chickpea salad first by mixing all of the ingredients and using salt and pepper to taste

Spread your go-to sandwich condiment on- we chose Dijon mustard!

Put your sandwich together. Layer veggies, a generous amount of chickpea salad, and some lettuce to top it off

Finish by topping with sprouts and bread

Herby Chickpea Salad Adding LonoLife Unflavored Collagen Peptides to our chickpea salad gives any sandwich a nutritious boost! INGREDIENTS: 1 batch Vegan Chickpea Salad (recipe below) 2 whole-grain bagels 2 tablespoon Dijon or yellow mustard 2-4 large butter lettuce leaves 1 cucumber, thinly sliced 1 carrot, thinly sliced using a vegetable peeler 4 radishes, thinly sliced 1 large handful alfalfa sprouts DIRECTIONS: In a large bowl, whisk together flour, brown sugar, baking powder, baking soda, salt and spices. Set aside. In a separate bowl, whisk milk, molasses, eggs, melted butter, water, and fresh ginger until well combined. Add the wet ingredients to the dry ingredients and gently stir until combined. Heat a lightly greased griddle or nonstick skillet over medium-low heat. Drop the pancakes into the pan by the quarter cup. Cook until the batter bubbles on the surface and browns on the bottom, then carefully flip. Cook until the batter is completely cooked through and the pancakes are golden brown. Repeat until all the batter is used. Enjoy!
