Keto Spicy Thai Noodles

Whip up this low carb, paleo & keto spicy Thai noodle recipe in minutes! Sweet, sour, salty & spicy, this recipe will be sure to hit all your tastebuds. Perfect for busy people who follow a keto diet.

INGREDIENTS:

  • 4 eggs
  • 2 Tbsp cream cheese
  • 2 Tbsp unflavored protein powder isolate
  • 1 packet LonoLife Thai Curry Beef Broth
  • 1 Tbsp oat fiber
  • ¼ Tsp garlic powder
  • salt & pepper
  • 3 Tbsp sesame oil
  • 1 Tsp Mae Ploy red curry paste
  • 3 Tbsp soy sauce
  • 3 Tbsp Wondrose granular sweetener
  • ½ Tsp red chili flakes
  • Optional: scallions, peanuts, cilantro, and sesame seeds to taste

DIRECTIONS:

1) To make noodles, blend 4 eggs, 2 Tbsp cream cheese, 2 Tbsp unflavored protein powder isolate, 1 packet LonoLife Thai Curry Beef Broth, 1 Tbsp oat fiber, 1/4 tsp garlic powder, salt, & pepper until smooth. 2) Pour on to a silicone mat covered cookie sheet. 3) Spread out to cover entire pan. 4) Bake at 325° for 10 minutes. 5) Cut into strips and set aside. 6) Heat sesame oil, curry paste, soy sauce, Wondrose, and chili flakes in a skillet on low until hot & bubbly. 7) Toss noodles in sauce. 8) Top with scallions, peanuts, cilantro, or sesame seeds. This dish is perfect served hot or cold!
