Cauliflower Broccoli Soup
One plus of cold weather, SOUP! This creamy concoction uses bone broth to make it extra healthy and smooth. AND because everything in it is already cooked and blended it's easy to digest, taking the workload off your digestive system.
Servings: 1 • Total Time: 25 Minutes
INGREDIENTS:
- 1 serving LonoLife Beef Bone Broth
- 2 cups of cauliflower florets
- 2 cups of broccoli florets
- 1 garlic clove
- 1/2 red onion
- 2 tablespoons of ghee or butter (option to substitute with olive oil)
- 1/2 cup of cream cheese (option to replace with coconut milk or cream of choice)
- salt & pepper to taste
DIRECTIONS:
1) Place veggies, onion & garlic into a double boiler for 20 minutes or until tender. Save 2-3 tablespoons of the boiled water.
2) Put all ingredients in a blender or food processor and mix until smooth.
3) Add 2-3 tablespoons of water from the boiler into the blender or food processor and continue to blend.
2) Enjoy with an avocado on the side!
